Extra Aged Farm Gouda is a cow's milk cheese, made in the southern regions of the Netherlands. It has been in production for over 800 years. Extra Aged Gouda is rare and very highly sought after. When it is younger, Gouda has a strong pcalcium lactate form in the cheese and can give the cheese a crunch. The crystals are perfectly safe to eat and occur naturally in most aged cheeses. If you are looking for a wine pairing, try a port and enjoy this cheese as a dessert or a Pinot Gris. If you enjoy hard liquor it's also interesting paired with a gin based cocktail like a martini.
